Hello hello and welcome! Today’s video features 6 super low effort vegan meal ideas! Tasty, simple to follow recipes you can make for yourself tonight! They’re all pretty quick to make and dare I say pretty healthy as well. We’ve got vegan baked omelette on toast in this one; curried “chicken” tofu tacos, a quick and lazy chili, delicious almond noodles and much more!!

#1 Spicy Kimchi Noodles 0:35

50g (1,76 oz ) glass noodles
1-2 handfuls fresh baby spinach
50g vegan kimchi (1,76 oz or ⅓ cup)
1 tbsp kimchi liquid
1 tbsp rice syrup
2 tsp soy sauce
1 ½ tbsp white wine vinegar or balsamic vinegar
1 tsp sunflower oil
1 tsp sesame seeds
¼ cup + 1 tbsp water (75ml) mixed with 1 ½ tsp cornstarch
if you want more spice and flavour: add ½ tsp of gochujang (or more to taste! – or sub w sriracha!)

→ serves 1 (this tastes really nice with the vegan “chicken” from recipe #6

#2 Lazy Quick Chili 2:04

2 tsp olive oil
1 red bell pepper
1 handful cremini mushrooms
1 spring onion
a pinch of chili flakes
½ can beans (120g = 4.23oz)
½ cup store bought tomato sauce (125ml)
1 cup vegetable broth (250ml)
1-2 handfuls fresh baby spinach
1 tsp nutritional yeast
1-2 tortillas for serving

→ serves 1

#3 Green Pepper & Almond Noodles 3:13

1 green bell pepper
vegetable oil for the pan
a pinch of salt and chili flakes
75g ramen noodles (2,64oz)

for the sauce:
1 tbsp almond butter
2 tsp soy sauce
1 tbsp white wine vinegar
1 tsp sriracha
2 tsp soy sauce
1 tbsp vegan worcestershire sauce (sub with 1 more teaspoon of soy sauce)
1-2 oat milk, more if needed
1 tsp sesame oil (optional)

→ serves 1

#4 Grilled Apple Peanut Toast 5:19

1 apple
1 tsp coconut oil for the pan
2 toasts
sprinkle of cinnamon
1-2 tbsp soy yogurt
optional: brown rice syrup or maple syrup

→ serves 1

#5 Baked Vegan Omelette 6:22

300g silken tofu (10,5oz)
1/2 cup (125ml) non dairy milk
2 tbsp olive oil
1/2 cup (60g) chickpea flour
1 tbsp cornstarch
2 tsp rice vinegar
2 tsp nutritional yeast
1/3 tsp salt
spices of choice: ½ tsp garlic powder, 1/4th tsp turmeric, ¼ tsp paprika …)
oil for the pan
1 handful of mushrooms
1 spring onion
also: toast, vegan cream cheese, fresh spinach, sriracha for serving
5 Minute Cucumber Salad: https://www.youtube.com/watch?v=1tmLifEUq-0&t=26s

→ serves 4 when eaten alongside toast (yields a 20 x 20 cm baking dish)

#6 Curried “Chicken” Tacos 8:30

for the “chicken”:
1 block firm plain tofu (200g) = (7.05oz)
1 ½ tbsp cornstarch
¼ tsp salt
2 tsp nutritional yeast
1 ½ tbsp white wine vinegar
½ tsp onion powder
¼ tsp garlic powder
¼ tsp curry powder
¼ tsp smoked paprika powder
oil for the pan
¼ cup coconut milk (60ml)
1 tbsp chopped herbs (chives, parsely…)
2-4 tortillas
1 avocado
vegan sour cream or unsweetened yogurt
red onion

→ serves 2
